Banana Bread Pancakes with Bananas and Jam

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 2 tablespoons flour (oat flour)
  • 1 teaspoon chia seeds
  • pinch of baking powder

Toppings

  • banana slices
  • jam (blueberry)
  • bee pollen
  • chia seeds

Preparation

  1. Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes.

  2. Heat a non-stick pan and pour the batter using a spoon to form pancakes. You can add a small amount of coconut oil if desired.

  3. Cook each side for 1 minute until golden-brown.

  4. Stack the pancakes and add banana slices, jam, bee pollen, and sprinkle more chia seeds.
