Banana Bread Pancakes with Bananas and Jam
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour (oat flour)
- 1 teaspoon chia seeds
- pinch of baking powder
Toppings
- banana slices
- jam (blueberry)
- bee pollen
- chia seeds
Preparation
Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes.
Heat a non-stick pan and pour the batter using a spoon to form pancakes. You can add a small amount of coconut oil if desired.
Cook each side for 1 minute until golden-brown.
Stack the pancakes and add banana slices, jam, bee pollen, and sprinkle more chia seeds.
