Fruit Loaded Sweet Potato Breakfast Plate
Ingredients
- 1/2 sweet potato
- kiwi
- purely elizabeth
- raspberries
- blackberries
- blueberries
- strawberries
- 1 cup Greek yogurt
Preparation
Roast the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it in for another 45 minutes.
Cut up the fruit including kiwi, raspberries, blackberries, blueberries, and strawberries.
Assemble the roasted sweet potato with the cut fruit.
Serve with a cup of Greek yogurt on the side for added protein.
