Sweet Potato Toast with Peanut Butter and Berries

Ingredients

  • Sweet potato
  • Peanut butter
  • Strawberries
  • Blueberries
  • Pistachios
  • Olive oil (optional)

Preparation

  1. Slice the sweet potato into approximately 1 cm thick slices.

  2. Lay the slices flat on a baking tray.

  3. Optionally, brush with a little olive oil.

  4. Preheat the oven to 180°C and bake for 40 minutes, flipping halfway through.

  5. Check after 30 minutes; baking time may vary depending on thickness.

  6. Once cooked, spread peanut butter on top and add strawberries, blueberries, and a sprinkle of pistachios.

  7. Alternatively, use your choice of bread instead of sweet potato for a quicker option.
