Hearty Vegan Lentil and Vegetable Quesadilla
Ingredients
- 1 Tbsp olive oil
- 1 cup red onion, chopped
- 3/4 cup red pepper, chopped
- 3/4 cup corn
- 2 garlic cloves, pressed
- 1/4 tsp red pepper flakes
- 1 cup lentils
- 1/2 cup vegan chorizo
- Handful of fresh basil, rough chopped
- 1/2 tsp cumin
- Salt and pepper to taste
- Shredded cheddar cheese
- Tomato and cayenne pepper cheese
- Cilantro
Preparation
Add olive oil to preheated pan, then add red onion and red pepper until they begin to soften.
Add chorizo, garlic, and fresh basil; continue cooking until chorizo is browned.
Add corn and heat through, then remove from pan and set aside.
Clean the pan, add olive oil, and preheat again.
Place tortilla in pan, add cheese to one half, top with cooked ingredients, add more cheese, and fold over.
Allow cheese to melt and flip the quesadilla.
Remove from pan, cut into triangular pieces, and enjoy.
