Homemade Coconut Chocolate Bars
Ingredients
- 3 cups unsweetened desiccated coconut
- 6 tbsp maple syrup
- 4 tbsp coconut oil
- 1 tsp vanilla
- 1/4 tsp salt
- 200g bar chocolate of your choice
Preparation
Blitz together all the ingredients apart from the chocolate until well mixed.
Press the coconut mix into a silicone mould to create bars or shape by hand if no mould is available.
Freeze for about 30 minutes to firm up.
Remove the bars from the mould.
Melt the chocolate by chopping it into small pieces and microwaving in 30-second intervals, stirring each time; about 1 minute is usually enough.
Dip the coconut bars into the melted chocolate to fully coat and place on greaseproof paper.
Refrigerate for at least 30 minutes for the chocolate to set.
Enjoy, and use vegan chocolate to make the bars vegan.
