Chocolate Peanut Butter Chickpea Balls
Ingredients
- 1 cup oats + 1/4 cup for rolling
- 1 can chickpeas, rinsed and drained
- 1/2 cup natural peanut butter
- 1/3 cup maple syrup
- 1 tsp coco powder
- 1 tsp vanilla
- A pinch of salt
- 1/4 cup non-dairy chocolate chips
Preparation
In a food processor, blend all ingredients except for oats, scrapping sides as you go.
Once well combine and chickpeas are broken down, add oats and blend.
Mix chocolate chips into dough and roll into balls about 1 tbsp in size.
Roll balls in oats to coat.
Store in the fridge.
