Chickpea Peanut Butter Chocolate Blondies

Ingredients

  • 1 can of chickpeas, rinsed and drained
  • 1/3 cup maple syrup
  • 1/2 cup natural peanut butter
  • 1 tbsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • a pinch of salt (only add if your chickpea are unsalted)
  • 1/2 cup non-dairy chocolate chips
  • 1/2 cup toasted unsweetened coconut shreds (toasting instructions below)

Preparation

  1. In a food processor, blend everything, except for chocolate chips and toasted coconut, until smooth scrapping sides as you go

  2. Fold in chocolate chips and coconut

  3. Line a medium sized baking dish with parchment paper

  4. Spread batter in dish and pat down

  5. Bake in a preheated oven at 350 degrees F for 20-25 mins

  6. Let cool and cut into 9 squares

  7. To toast coconut - Heat a frying pan over medium heat and add unsweetened coconut shreds

  8. Stir constantly until coconut is browed (2-3 minutes)
