Chickpea Peanut Butter Chocolate Blondies
Ingredients
- 1 can of chickpeas, rinsed and drained
- 1/3 cup maple syrup
- 1/2 cup natural peanut butter
- 1 tbsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- a pinch of salt (only add if your chickpea are unsalted)
- 1/2 cup non-dairy chocolate chips
- 1/2 cup toasted unsweetened coconut shreds (toasting instructions below)
Preparation
In a food processor, blend everything, except for chocolate chips and toasted coconut, until smooth scrapping sides as you go
Fold in chocolate chips and coconut
Line a medium sized baking dish with parchment paper
Spread batter in dish and pat down
Bake in a preheated oven at 350 degrees F for 20-25 mins
Let cool and cut into 9 squares
To toast coconut - Heat a frying pan over medium heat and add unsweetened coconut shreds
Stir constantly until coconut is browed (2-3 minutes)
