Homemade Peanut Butter Chocolate Cups

Ingredients

  • 1/4 cup @yoursuperfoods chocolate lovers
  • 1/2 cup vegan chocolate (I used @paschachocolate dark chocolate chips)
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup

Chocolate cups

  • 1/4 cup @yoursuperfoods chocolate lovers
  • 1/2 cup vegan chocolate (I used @paschachocolate dark chocolate chips)
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup

Peanut butter filling

  • 1/3 cup creamy thin nut butter
  • 2 tbsp maple syrup

Preparation

  1. In a double boiler or saucepan on very low heat, combine all chocolate cup ingredients and stir constantly until chocolate melts and a thick chocolate sauce forms. Set aside and cool.

  2. Combine and stir well the peanut butter filling ingredients.

  3. Using silicon muffin holders or a muffin tray, add a bottom layer of chocolate sauce (about 1 small spoonful). Add a teaspoon size of peanut butter filling then another small spoonful of chocolate over top. Repeat until everything is used up.

  4. Freeze for about an hour. This will last in the freezer for days and weeks.
