Peanut Butter Cheesecake Cups
Ingredients
Crust
- 3/4 cup oat flour
- 1/4 cup cacao powder
- 1/3 cup peanut butter
- 1/4 cup maple syrup
Filling
- 1 cup unsweetened coconut milk (or desired milk)
- 1/3 cup peanut butter
- 1/3 cup maple syrup
- 1/4 cup oat flour
Chocolate topping
- 3 tbsp chocolate chips
- 2 tsp coconut oil
Preparation
Line 12 muffin slots (silicon cups work best)
In a medium bowl, mix together all ingredients for the crust. Place 1 tablespoon mixture in each cup and press down
Blend together all ingredients for the filling. Pour 2 heaping tablespoons in each cup
Freeze for 2-3 hours or until the filling hardens
Drizzle with melted chocolate mixture, freeze for an additional 5-10 minutes and enjoy
