Peanut Butter Cheesecake Cups

Ingredients

Crust

  • 3/4 cup oat flour
  • 1/4 cup cacao powder
  • 1/3 cup peanut butter
  • 1/4 cup maple syrup

Filling

  • 1 cup unsweetened coconut milk (or desired milk)
  • 1/3 cup peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup oat flour

Chocolate topping

  • 3 tbsp chocolate chips
  • 2 tsp coconut oil

Preparation

  1. Line 12 muffin slots (silicon cups work best)

  2. In a medium bowl, mix together all ingredients for the crust. Place 1 tablespoon mixture in each cup and press down

  3. Blend together all ingredients for the filling. Pour 2 heaping tablespoons in each cup

  4. Freeze for 2-3 hours or until the filling hardens

  5. Drizzle with melted chocolate mixture, freeze for an additional 5-10 minutes and enjoy
