Mini Paleo Chocolate Cups
Ingredients
- 1 1/4 cup chocolate chips (I used @enjoylifefoods chocolate chunks)
- 2 tbsp coconut oil
- 1/2 cup of @justins cashew butter
- 2 tbsp maple syrup
Preparation
Line a mini cupcake pan with mini cupcake liners. I made about 16.
In a bowl mix together: 1 1/4 cup chocolate chips + 2 tbsp coconut oil. Melt for 30 seconds, stir, and repeat until fully melted. Pour 1/2 of the batter into the cupcake pans, about halfway full.
Put the pan in the freezer for an hour or until the chocolate is hardened.
Make the cashew butter mixture: I used 1/2 cup of @justins cashew butter + 2 tbsp maple syrup. Mix together then spoon out some to put in each cup. Fill almost to the top and take a knife to smooth it out if you want it to look pretty.
Pour the rest of the chocolate on top then put back in the freezer for another hour until they’re hardened again. Enjoy! Store in the fridge or the freezer.
