Easy No Bake Vegan Coconut Bars

Ingredients

  • 1/2 cup desiccated coconut
  • 1 cup ground almonds
  • 1/3 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 1/4 cup coconut flour
  • Jam for a jammy layer (optional)
  • 80g chocolate of choice, melted
  • 1 tsp coconut oil

Preparation

  1. Mix all the ingredients for the coconut base in a bowl. You can use your hands to combine the mixture together.

  2. The mixture makes 4 large bars or 8 little ones. Use a mould or a square tin and cut into bars afterwards.

  3. Press the coconut mix into the moulds and spread a thick jammy layer on top if using jam.

  4. Melt the chocolate and the coconut oil together and pour on top of the jam layer or straight onto the coconut layer if not using jam.

  5. Leave to set in the fridge for at least an hour.

  6. Then enjoy the bars!
