Ocean Blue Bars

Ingredients

  • 3/4 c. almond flour
  • 3/4 c. granola
  • 1 c. dates
  • 2 t. coconut oil
  • ingredients (filling)
  • 1 c. cashews
  • 1/4 c. maple syrup
  • 1 t. coconut oil
  • 1 t. vanilla extract

Preparation

  1. Line a 9x9 baking pan with parchment paper

  2. Blend all ingredients on high speed until fully combined

  3. Dump into prepared pan, and press mixture into pan firmly (using your fingers or a spatula)

  4. Place in freezer while you prepare the filling

  5. Soak the cashews in hot water for 30 mins, then add all ingredients except the #unicornsuperfoods powder to the blender

  6. Blend on high speed until creamy

  7. Split the creamy mixture into 2 bowls

  8. Add Ocean Blue powder to 1, and leave the other white

  9. Remove pan from the freezer, and add dollops of each mixture onto the crust

  10. Using a butter knife, swirl the colors together to achieve a pretty marbled look

  11. Place in freezer for 30 mins, and enjoy
