Protein-Packed Pumpkin Pancakes
Ingredients
- 1 cup Kodiak Cakes pumpkin flax mix
- 1 cup unsweetened almond milk
- Cinnamon (to taste)
- Ancient Nutrition collagen
Toppings
- Organic peanut butter
- Bananas
- Blackberries
- Pomegranate seeds
- Siggi's plain yogurt
- Gr8nola
Preparation
Mix the ingredients together to form a batter
Heat a non-stick pan or griddle over medium heat
Pour batter onto the pan to form pancakes and cook until bubbles form, then flip and cook the other side until golden
Prepare toppings: caramelize bananas in a pan with a bit of butter or sugar until golden
Serve pancakes with organic peanut butter, caramelized bananas, blackberries, pomegranate seeds, plain yogurt, and granola
