Banana Oat and Egg Pancakes
Ingredients
- 1 cup unsweetened almond milk
- 1 egg
- 2 bananas (slightly ripe, mashed a little)
- 2 cups rolled oats
- 1 tablespoon baking powder
- 1 scoop VPA vanilla protein powder (optional)
- a dash of cinnamon
Preparation
Blend all ingredients together until smooth, for at least 30 seconds.
Allow the mixture to stand for a while before cooking the batter.
Heat a non-stick pan over high heat, then reduce to low to medium heat before adding about 1/3 cup of the pancake mixture to the pan.
Cook each pancake until bubbles form on the surface, then flip and cook the other side until golden brown
