Banana Oat and Egg Pancakes

Ingredients

  • 1 cup unsweetened almond milk
  • 1 egg
  • 2 bananas (slightly ripe, mashed a little)
  • 2 cups rolled oats
  • 1 tablespoon baking powder
  • 1 scoop VPA vanilla protein powder (optional)
  • a dash of cinnamon

Preparation

  1. Blend all ingredients together until smooth, for at least 30 seconds.

  2. Allow the mixture to stand for a while before cooking the batter.

  3. Heat a non-stick pan over high heat, then reduce to low to medium heat before adding about 1/3 cup of the pancake mixture to the pan.

  4. Cook each pancake until bubbles form on the surface, then flip and cook the other side until golden brown
