Sweet Potato Toast with Cinnamon Fruits

Ingredients

  • 2/3 sweet potato
  • Coconut oil
  • Cinnamon
  • Apples
  • Bananas
  • Organic peanut butter
  • Plain kefir

Preparation

  1. Slice the sweet potato into 6 small slices and bake at 400°F for 40 minutes.

  2. Reheat the baked sweet potato slices in a toaster.

  3. For sautéed apples: Heat a pan over low-medium heat, add some coconut oil, then add apples sprinkled with cinnamon, and cook for 5-7 minutes.

  4. Add bananas sprinkled with cinnamon to the pan and cook for 30 seconds on each side.

  5. Melt the peanut butter in a microwave for 30 seconds.

  6. Top the sweet potato toasts with plain kefir, melted peanut butter, sautéed apples, and sautéed bananas.
