Sweet Potato Toast with Cinnamon Fruits
Ingredients
- 2/3 sweet potato
- Coconut oil
- Cinnamon
- Apples
- Bananas
- Organic peanut butter
- Plain kefir
Preparation
Slice the sweet potato into 6 small slices and bake at 400°F for 40 minutes.
Reheat the baked sweet potato slices in a toaster.
For sautéed apples: Heat a pan over low-medium heat, add some coconut oil, then add apples sprinkled with cinnamon, and cook for 5-7 minutes.
Add bananas sprinkled with cinnamon to the pan and cook for 30 seconds on each side.
Melt the peanut butter in a microwave for 30 seconds.
Top the sweet potato toasts with plain kefir, melted peanut butter, sautéed apples, and sautéed bananas.
