Super Greens Soup

Ingredients

  • 1l stock
  • 1/2 pack of tofu
  • 1/2 pack of frozen edamame
  • 1 tsp miso paste
  • nutritional yeast
  • mustard
  • lemon juice
  • any fresh greens you have (I used chopped parsley and chopped spinach)
  • Japanese buckwheat noodles (or any noodles
  • you can even use spaghetti)

Preparation

  1. Dry tofu with abit of Salt in a large pot until crispy

  2. Add all other ingredients apart from fresh greens and edamame to the pot.stir through and cover for five minutes

  3. Add greens and edamame. Let simmer for another 10 minutes then serve :)
