One Pot Mushroom Miso Soup

Ingredients

  • Miso paste
  • 1L veggie stock
  • Tofu
  • Noodles
  • Mushrooms
  • Kale
  • Spring onion
  • Edamame
  • Soy sauce
  • Sesame oil
  • Chilli flakes
  • Sesame seeds

Preparation

  1. Heat up a touch of sesame oil and olive oil in a wok. Add tofu and cook until golden. At this stage add mushrooms and cook for a further 5 minutes

  2. Mix some hot water to your miso paste and mix it through until it’s fully liquid. Add this to your wok along with all the other ingredients. Adjust soy sauce and miso to get the broth to your taste

  3. Chuck on the lid and let it cook for around 10 minutes. Serve straight away and top with chopped coriander and sesame seeds
