Vimto Berry Muffins with Syrup

Ingredients

  • 2 cups whole wheat all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup + 2 tbsp granulated sugar
  • 1/4 cup + 1 tbsp oil
  • 1/4 cup vimto syrup
  • 1/2 cup water
  • 1 cup soy milk (berry flavor)
  • 1 tsp apple cider vinegar

Syrup

  • 1/4 cup Vimto syrup
  • 3/4 cup water
  • 1 tablespoon sugar
  • 1 tablespoon tapioca starch

Preparation

  1. Preheat the oven to 180 C. Line a muffin tin with baking cups and set aside.

  2. In a small bowl combine soy milk and apple cider vinegar and let sit for 10 minutes to curdle.

  3. Sift all dry ingredients together.

  4. In a large bowl mix all wet ingredients together until completely incorporated. Add the dry ingredients to the wet, folding in gently until just combined.

  5. Fill the muffin liners 2/3 full and bake for 12 - 15 minutes, until a toothpick inserted in the middle comes out clean. Set the muffins on a cooling rack to cool.

  6. For the syrup: mix all the ingredients and stir on high heat until it thickens and becomes like syrup.

  7. Once completely cool, drizzle syrup on top and enjoy.
