Vimto Berry Muffins with Syrup
Ingredients
- 2 cups whole wheat all-purpose flour
- 2 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup + 2 tbsp granulated sugar
- 1/4 cup + 1 tbsp oil
- 1/4 cup vimto syrup
- 1/2 cup water
- 1 cup soy milk (berry flavor)
- 1 tsp apple cider vinegar
Syrup
- 1/4 cup Vimto syrup
- 3/4 cup water
- 1 tablespoon sugar
- 1 tablespoon tapioca starch
Preparation
Preheat the oven to 180 C. Line a muffin tin with baking cups and set aside.
In a small bowl combine soy milk and apple cider vinegar and let sit for 10 minutes to curdle.
Sift all dry ingredients together.
In a large bowl mix all wet ingredients together until completely incorporated. Add the dry ingredients to the wet, folding in gently until just combined.
Fill the muffin liners 2/3 full and bake for 12 - 15 minutes, until a toothpick inserted in the middle comes out clean. Set the muffins on a cooling rack to cool.
For the syrup: mix all the ingredients and stir on high heat until it thickens and becomes like syrup.
Once completely cool, drizzle syrup on top and enjoy.
