Easy High Protein High Fiber Chickpea Salad
Ingredients
- 1 cup chickpeas/garbanzo beans
- 1/2 red onion or 1 large tomato
- 2-3 Persian Cucumbers
- Chopped fresh mint or cilantro
- Lemon juice or your favorite salad dressing
- Himalayan Salt & Crushed Black Pepper, to taste
- OPTIONAL: chopped radish
- OPTIONAL: Garlic Powder, Dried Dill, Cayenne Pepper, Onion Powder
Preparation
Drain and rinse the chickpeas
Chop up veggies
Put it all in a bowl, sprinkle on your favorite dressing, and/or spices - mix!
