Easy High Protein High Fiber Chickpea Salad

Ingredients

  • 1 cup chickpeas/garbanzo beans
  • 1/2 red onion or 1 large tomato
  • 2-3 Persian Cucumbers
  • Chopped fresh mint or cilantro
  • Lemon juice or your favorite salad dressing
  • Himalayan Salt & Crushed Black Pepper, to taste
  • OPTIONAL: chopped radish
  • OPTIONAL: Garlic Powder, Dried Dill, Cayenne Pepper, Onion Powder

Preparation

  1. Drain and rinse the chickpeas

  2. Chop up veggies

  3. Put it all in a bowl, sprinkle on your favorite dressing, and/or spices - mix!
