Festive Christmas Eve Salad with Red Cabbage, Mango, and Walnuts

Ingredients

  • 1 mango
  • 1/2 red cabbage
  • 3 handfuls of portulak salad leaves
  • Handful of walnuts

Dressing

  • 4 tablespoons olive oil
  • 2 tablespoons vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon mustard
  • Salt and pepper to taste
  • 1 teaspoon soy sauce

Preparation

  1. Chop the red cabbage into thin slices.

  2. Cut the mango into rough slices.

  3. Wash the portulak salad leaves thoroughly.

  4. In a bowl, combine the olive oil, vinegar, maple syrup, mustard, salt, pepper, and soy sauce to create the dressing.

  5. Mix the dressing with the chopped mango, red cabbage, and portulak salad leaves.

  6. In a dry pan, lightly toast the walnuts until fragrant. Remove from heat.

  7. Roughly chop the toasted walnuts and sprinkle them on top of the salad.

  8. Serve the Christmas Eve salad immediately to enjoy the holiday flavors.
