Loaded sweet potato with spicy zucchini and baobab garlic sauce

Ingredients

  • several sweet potatoes
  • 2 cups chopped zucchini
  • 4 tablespoons olive oil
  • 3 garlic cloves
  • 1 onion
  • 1 chili
  • 2 tablespoons baobab powder
  • 1/2 cup almond milk
  • salt
  • pepper

Preparation

  1. Oven roast several sweet potatoes.

  2. Cook chopped onion in 2 tablespoons of olive oil for 5 minutes.

  3. Add the zucchini and one crushed garlic clove and cook for 10 more minutes.

  4. Leave it to cool down.

  5. Blend it with all the other ingredients, except salt and pepper.

  6. Add salt and pepper at the end.

  7. Serve with quick curried quinoa, sautéed kale and pepper, and salad.
