Apple Almond Bread
Ingredients
- 5 small apples
- 1 and a half cups of rolled oats
- 1 cup almonds
- 1 cup whole wheat or spelt flour
- 1/2 cup unsweetened plant yogurt
- 1/4 cup maple syrup
- 1 tbsp date sugar
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tbsp apple cider vinegar
- 1/2 tbsp cinnamon
Topping
- 1 sliced apple
- Handful of slivered almonds
- 1-2 tbsp of maple syrup
Preparation
Preheat oven to 350 F/175 C.
Add oats and almonds to a food processor and blend into flour. Set aside.
Peel and core apples, slice one of them for the topping and roughly chop the rest.
Add chopped apples to the food processor and pulse until shredded.
Then add oat, almond and whole wheat flour back to the apples, along with the remaining ingredients and blend until smooth.
Add everything to a silicone (or greased) baking pan, top with apple slices, slivered almonds and drizzle a bit of maple syrup on top.
Bake for about 50-55 minutes (check with a tooth pick if you are not sure if it is done), let cool down a bit and enjoy!
