Double Toasted Sourdough with Avocado and Fried Egg

Ingredients

  • 2 pieces of sourdough bread
  • Spinach
  • Ghee
  • 1 egg
  • 1/2 avocado
  • Trader Joe’s everything but the bagel seasoning

Preparation

  1. Toast two pieces of sourdough bread.

  2. Cook spinach in ghee until wilted.

  3. Fry an egg to your desired doneness.

  4. Top one piece of toast with the cooked spinach and fried egg.

  5. Mash or slice 1/2 avocado and spread it on the second piece of toast.

  6. Sprinkle the avocado toast with Trader Joe’s everything but the bagel seasoning.
