Simple Meal Prep Breakfast with Egg and Sweet Potatoes
Ingredients
- 1 egg
- 1/2 avocado
- Red pepper flakes (to taste)
- 2-3 small sweet potatoes
- 1 tablespoon avocado oil
- 1/2 tablespoon garlic
- 1/2 tablespoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- Zucchini (quantity not specified)
- Tomatoes (quantity not specified)
Preparation
Boil 1 egg for 7 minutes, then transfer to cold water to cool.
Preheat oven to 400°F. Mix 2-3 small sweet potatoes (sliced into chips) with 1 tablespoon avocado oil, 1/2 tablespoon garlic, 1/2 tablespoon onion powder, 1/2 teaspoon paprika, and 1/2 teaspoon chili powder.
Bake the sweet potato mixture for 20 minutes on each side, then broil to make crispy.
Sauté zucchini and tomatoes in a pan until cooked.
Slice 1/2 avocado and sprinkle with red pepper flakes to taste.
Assemble all components together in a bowl.
