Simple Meal Prep Breakfast with Egg and Sweet Potatoes

Ingredients

  • 1 egg
  • 1/2 avocado
  • Red pepper flakes (to taste)
  • 2-3 small sweet potatoes
  • 1 tablespoon avocado oil
  • 1/2 tablespoon garlic
  • 1/2 tablespoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Zucchini (quantity not specified)
  • Tomatoes (quantity not specified)

Preparation

  1. Boil 1 egg for 7 minutes, then transfer to cold water to cool.

  2. Preheat oven to 400°F. Mix 2-3 small sweet potatoes (sliced into chips) with 1 tablespoon avocado oil, 1/2 tablespoon garlic, 1/2 tablespoon onion powder, 1/2 teaspoon paprika, and 1/2 teaspoon chili powder.

  3. Bake the sweet potato mixture for 20 minutes on each side, then broil to make crispy.

  4. Sauté zucchini and tomatoes in a pan until cooked.

  5. Slice 1/2 avocado and sprinkle with red pepper flakes to taste.

  6. Assemble all components together in a bowl.
