Vegan Chickpea Tunaless Salad Alternative

Ingredients

  • 1 (15 ounce) can chickpeas
  • 1 stalk celery
  • 1 small onion
  • 1/2 cup vegan mayonnaise
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

Preparation

  1. Optionally, add nori or seaweed flakes for a more fishy and tuna-like flavor.

  2. In a mixing bowl, mash chickpeas with a fork until they look flaky in appearance.

  3. Add the remaining ingredients and mix well.

  4. Serve over fresh salad greens or on sandwich bread to make tunaless salad sandwiches.
