Vegan Chickpea Tunaless Salad Alternative
Ingredients
- 1 (15 ounce) can chickpeas
- 1 stalk celery
- 1 small onion
- 1/2 cup vegan mayonnaise
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
Preparation
Optionally, add nori or seaweed flakes for a more fishy and tuna-like flavor.
In a mixing bowl, mash chickpeas with a fork until they look flaky in appearance.
Add the remaining ingredients and mix well.
Serve over fresh salad greens or on sandwich bread to make tunaless salad sandwiches.
