Artichoke and Hearts of Palm Sammy with Lemon Aioli

Ingredients

  • 1/2 medium onion, chopped fine
  • 2 garlic cloves, minced
  • 14 oz. can Native Forest Organic Hearts of Palm by @edwardandsons patted dry & chopped coarsely
  • 6 oz. jar Native Forest Marinated Artichoke Hearts by @edwardandsons patted dry & chopped coarsely
  • 1 1/4 tsp. celery salt
  • 1/4 tsp. each paprika, mustard powder & black pepper
  • Pinch of cinnamon, nutmeg & ginger
  • 1 tbsp. arrowroot powder
  • 1/4 cup vegan mayo
  • 3/4 cup bread crumbs, divided
  • 1/4 cup chopped parsley
  • Squeeze of 1/2 lemon

Lemon aioli

  • 1/3 cup vegan mayo
  • 1 minced garlic clove
  • Zest of whole lemon
  • Juice from 1/2 lemon
  • Salt and pepper to taste

Preparation

  1. In a large bowl, combine chopped onions, garlic, Hearts of Palm & Artichoke Hearts.

  2. Add all seasonings, arrowroot powder, vegan mayo, 1/4 cup breadcrumbs, chopped parsley, lemon juice & combine.

  3. Divide into 5 cakes & use the remaining breadcrumbs to gently coat cakes and let rest in fridge for 20 mins.

  4. Heat pan on medium-high heat with avocado oil and cook 3-4 mins until golden & warmed through on each side.

  5. Mix all aioli ingredients in bowl & add to your sammy with some herbs/greens/tomatoes!
