No-Bake Vegan Berry Nut Bliss Balls

Ingredients

  • 10 medjool dates, seeds removed
  • 1 cup raw cashews
  • 2 cups desiccated coconut
  • 1 tsp vanilla extract
  • A pinch of salt
  • Freeze-dried raspberry (for coating)

Preparation

  1. Blend the dates, cashews, coconut, vanilla extract, and salt together until a sticky mixture forms

  2. Roll the mixture into small balls

  3. Coat the balls in crushed freeze-dried raspberries

  4. Chill in the refrigerator until firm, if desired
