Refined Sugar-Free Lemon Cake Protein Truffles

Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • juice of 1 lemon
  • 3 tablespoons 100% pure maple syrup
  • 3 drops lemon oil flavor
  • 1 cup white chocolate chips
  • 1 cup nonfat cottage cheese
  • pinch of salt
  • 1 tablespoon coconut oil
  • 2 drops yellow food coloring (optional)
  • tiny mint leaves for garnish

Preparation

  1. Combine oat flour, protein powder and salt. Set aside.

  2. Blend cottage cheese, maple syrup, and lemon juice until smooth.

  3. Add the blended mixture to the dry ingredients and combine until a dough forms.

  4. Roll the dough into 8 balls and place on a parchment-lined baking sheet.

  5. Freeze the balls for a few minutes.

  6. Melt white chocolate and coconut oil in the microwave, heating in 20-second intervals and stirring until smooth.

  7. Add lemon oil and yellow food coloring to the melted mixture.

  8. Coat each ball in the white chocolate and top with tiny mint leaves.

  9. Refrigerate for about 25 minutes.

  1. Store in an airtight container for up to 4 days.
