Sweet Rosemary and Chilli Roasted Nuts

Ingredients

  • 3 cups raw unsalted mixed nuts
  • 1 egg white or 2 Tbs aquafaba
  • 3 Tbsp maple syrup
  • 1/4 tsp chilli or cayenne pepper
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 2 Tbs flaxseed
  • 3 Tbs amaranth (or millet or quinoa)
  • 1 1/2 Tbsp fresh rosemary chopped (or thyme or marjoram)

Preparation

  1. Preheat the oven to 180C and line a baking tray.

  2. Whisk the egg white or aquafaba until frothy.

  3. Add the rest of the ingredients and combine well to coat.

  4. Spread out evenly on a baking tray and bake for about 25 minutes until the nuts start to brown.

  5. Toss halfway.

  6. Allow to cool and break into bite size crunchy clusters.

Tips

  1. Roasting nuts enhances flavor and makes them easier to digest by altering how the body processes them.

  2. Use egg white to bind flavorings onto the nuts and create crunchy clusters; substitute with 2-3 tablespoons of aquafaba if egg-free.
