Tropical Bliss Balls with Pineapple and Coconut

Ingredients

  • 1 cup pineapple (canned is fine!)
  • 1 1/4 cups oats
  • 1 cup almonds
  • 2 T. maple syrup
  • 1/2 cup shredded coconut
  • 7 dates
  • sprinkle of cinnamon

Preparation

  1. Soak the dates in warm water for ten minutes, and remove skins

  2. Blend the pineapple, oats, almonds, and dates in a food processor

  3. Stir in the rest of the ingredients and roll into balls and roll in shredded coconut

  4. Refrigerate
