Vegan Coconut Bounty Bars

Ingredients

  • Dried rasped coconut
  • Coconut cream from canned coconut milk
  • Stevia or rice syrup or other sweetener
  • Vanilla (optional)
  • Dark chocolate

Preparation

  1. Use as much dried rasped coconut as desired and gradually add coconut cream, mixing with your hands until a sticky consistency is achieved with no lumps.

  2. Add sweetener to taste and vanilla if desired.

  3. Form the mixture into bounty bars and freeze them.

  4. Melt dark chocolate and coat the frozen bars in it.

  5. Let the chocolate set and store in the fridge or freezer.

Tips

  1. Storing in the freezer allows you to enjoy it like ice cream.
