Simple Vegan Shiitake Bean Soup

Ingredients

  • 1 can pinto beans
  • yellow onions
  • garlic
  • 1 cup water
  • 1/2 cup almond milk
  • 2 tbsp coconut milk
  • 1 tbsp miso paste
  • chopped yellow peppers
  • dried shiitake mushrooms
  • black pepper
  • bay leaves
  • thyme

Preparation

  1. Drain and rinse the pinto beans.

  2. Water fry the yellow onions and garlic.

  3. Add 1 cup of water, 1/2 cup almond milk, 2 tablespoons of coconut milk, 1 tablespoon of miso paste, chopped yellow peppers, dried shiitake mushrooms, and season with black pepper, bay leaves, and thyme.

  4. Let the soup simmer for 15 minutes and enjoy.
