Simple Vegan Shiitake Bean Soup
Ingredients
- 1 can pinto beans
- yellow onions
- garlic
- 1 cup water
- 1/2 cup almond milk
- 2 tbsp coconut milk
- 1 tbsp miso paste
- chopped yellow peppers
- dried shiitake mushrooms
- black pepper
- bay leaves
- thyme
Preparation
Drain and rinse the pinto beans.
Water fry the yellow onions and garlic.
Add 1 cup of water, 1/2 cup almond milk, 2 tablespoons of coconut milk, 1 tablespoon of miso paste, chopped yellow peppers, dried shiitake mushrooms, and season with black pepper, bay leaves, and thyme.
Let the soup simmer for 15 minutes and enjoy.
