Cake Batter Cookie Bars

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 2/3 cup cashew butter
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup or honey
  • 2 tablespoons vanilla collagen
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • Sprinkles

Preparation

  1. Preheat oven to 350°F

  2. In a bowl, whisk 2 eggs

  3. Add 1 cup almond flour, 2 tablespoons coconut flour, 2/3 cup cashew butter, 1/2 cup coconut sugar, 1/4 cup maple syrup or honey, 2 tablespoons vanilla collagen, 1 teaspoon vanilla, and 1 teaspoon baking powder, and mix well

  4. Add sprinkles and fold them in using a spatula

  5. Line a brownie pan with parchment paper and spread the batter evenly

  6. Bake for 25-28 minutes

  7. Wait 5-10 minutes to cool before removing from the pan
