Colorful Vegetable Quiche with Quark Dough

Ingredients

Quark dough

  • 125 g low-fat quark
  • 1 egg yolk
  • 125 g flour
  • a pinch of salt
  • 2 tablespoons olive oil

Filling

  • 150 g mountain cheese
  • 3 eggs
  • 200 g cream cheese
  • a pinch of salt and pepper
  • 1 green zucchini
  • 1 yellow zucchini
  • 2 long carrots

Preparation

  1. Mix all dough ingredients in a bowl and knead into a smooth dough.

  2. Shape the dough into a ball and let it rest in the refrigerator for at least 30 minutes.

  3. Peel the vegetables into thin strips using a vegetable peeler.

  4. Grate the mountain cheese and mix with cream cheese, salt, pepper, and eggs.

  5. Roll out the dough on a floured surface slightly larger than the tart pan.

  6. Grease the pan with butter and dust with flour.

  7. Place the dough in the pan and pull up the edges.

  8. Prick with a fork several times and blind bake at 180 degrees Celsius top and bottom heat for 12 minutes.

  9. Spread the egg mixture on the pre-baked dough and insert the vegetable strips upright into the dough one by one.

  10. Bake the quiche again for another 30 minutes until golden brown.
