Spicy Wild Garlic Kaiserschmarren
Ingredients
- 3 eggs
- 150 ml milk
- 150 g spelt flour
- 100 g wild garlic
- 50 g mountain cheese
- a pinch of salt and pepper
Preparation
Separate the eggs into yolks and whites.
Puree the wild garlic, milk, and egg yolks finely with a hand blender.
Gradually stir in the spelt flour.
Beat the egg whites until stiff and fold into the wild garlic mixture.
Mix in salt, pepper, and mountain cheese.
Pour the mixture into a greased, heated pan and cook covered over medium heat for about 5 minutes.
Flip the herb-green mass and tear into small pieces with two forks.
