Homemade Brazilian Cheese Bread Bites

Ingredients

  • 1/2 cup oil
  • 1 1/2 cups milk
  • 3 eggs
  • 1 1/2 cups grated cheese (approximately)
  • 4 cups tapioca starch (about 500g)
  • Salt to taste

Preparation

  1. Boil the milk with oil and salt, but first taste the cheese as some cheeses are saltier and may not require additional salt

  2. Pour the hot liquid evenly over the tapioca starch to avoid dry spots, then mix slightly to moisten well and let cool until warm

  3. Add the grated cheese to the warm dough, incorporate, and adjust salt to taste

  4. Add eggs one at a time, mixing well after each addition, until the dough reaches a soft, firm, and non-sticky consistency (the number of eggs may vary depending on size)

  5. Knead briefly to homogenize, shape into small balls, and bake in a 250Β°C oven until golden brown
