Creamy Cucumber Salad Sandwich with Hummus and Greens

Ingredients

Salad base

  • 1/3 cup thinly sliced cucumber
  • 1/4 cup finely diced carrots
  • 1 finely chopped date
  • 1 T sliced almonds

Dressing

  • 3 T plant-based yogurt (such as Silk or plaij)
  • 1 tsp vegan mayonnaise (optional, such as Follow Your Heart)
  • 1 T lemon juice
  • 1/4 tsp kosher salt
  • pepper to taste
  • garlic powder to taste
  • oregano to taste
  • 1 T finely chopped fresh dill

Sandwich assembly

  • sliced bread, toasted
  • hummus
  • mixed greens
  • tomato, sliced

Preparation

  1. Combine cucumber, carrots, date, and almonds in a bowl

  2. Whisk together yogurt, mayonnaise (if using), lemon juice, salt, pepper, garlic powder, and oregano in a small bowl, then stir in dill

  3. Pour dressing over salad base and toss to coat

  4. Toast the bread until golden

  5. Spread hummus on the toasted bread

  6. Top with mixed greens, sliced tomato, and cucumber salad
