Easy Vegan Chickpea Stir-Fry
Ingredients
- 1 can of chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- Salt and pepper to taste
Preparation
Heat the olive oil in a pan over medium heat.
Sauté the onion and garlic until translucent.
Add the bell pepper and zucchini, cooking until tender.
Stir in the chickpeas, soy sauce, and maple syrup.
Cook for another 5 minutes, seasoning with salt and pepper.
