Quick and Easy Pork and Greens Stir Fry
Ingredients
- 200g green beans, trimmed and chopped
- 1 zucchini, halved and diced
- 220g pork mince
- 1/2 small onion, finely diced
- 2 tsp finely chopped ginger
- 2.5 tbsp olive oil or peanut oil
Sauce
- 1 tbsp soy sauce (dark preferred)
- 1 tbsp sake or mirin
- 1 tbsp maple syrup
- 1.5 tsp mixture of crushed garlic and finely chopped chili
Preparation
Mix the sauce ingredients into a bowl.
Heat the oil in a fry pan on high until hot (or smoking if using peanut oil). Add the prepared beans and zucchini in an even layer, cook for 1 minute. Stir, spread out, cook for 30 seconds and repeat until beans are charred but tender crisp. Remove into a bowl.
Turn heat down to medium high, add 1 tablespoon oil, add onion, garlic, ginger and cook for 1 minute.
Turn heat back to high, add pork and cook for 2 minutes, breaking it up as you go. Then add sauce, cook for 30 seconds, add beans, cook for another 30 seconds.
Serve over rice or cauliflower rice with a few extra slices of chili.
