Easy Vegetable Lo Mein Stir-Fry

Ingredients

  • Cooking spray
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 cup frozen vegetables
  • 1 pound chopped baby bok choy
  • 1 to 1.5 cups thin spaghetti
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper

Preparation

  1. Heat a large skillet or wok over medium-high heat and lightly coat with cooking spray.

  2. Add 1 tablespoon of minced garlic and 1 tablespoon of minced ginger. Stir in 1 cup frozen vegetables and 1 pound chopped baby bok choy; stir frequently.

  3. Add the thin spaghetti, 1 tablespoon soy sauce, 1 teaspoon sesame oil, and 1/4 teaspoon white pepper.

  4. Toss the mixture for about 3 minutes until ingredients are evenly distributed.
