Fresh Avocado Shrimp Ceviche
Ingredients
- 1 lb shrimp
- 3 limes + 1 lemon
- 1 jalapeño
- 2 baby cucumbers
- 1/4 cup red onion
- 1/4 cup cilantro
- 1 avocado
- Salt & pepper
Preparation
Juice the limes and lemon
Chop the shrimp, jalapeño, baby cucumbers, red onion, and cilantro
Combine the chopped shrimp with the citrus juice in a bowl and let marinate until the shrimp is opaque and firm
Mix in the chopped jalapeño, cucumbers, onion, and cilantro
Gently fold in the avocado just before serving
Season with salt and pepper to taste and serve immediately, ideally with tortilla chips

The shrimp 'cooks' in the acid from the citrus juice, so ensure it's fully marinated for food safety
This dish comes together quickly and is perfect for hot weather meals
