General Tso's Tempeh

Ingredients

  • 3 tbsp vegetable oil
  • 1 chopped onion
  • 1 red bell pepper, sliced
  • 1 head of broccoli cut into florets 200 g
  • 240 g tempeh diced
  • 1 tbsp minced ginger
  • 1/4 cup soy sauce (or tamari)
  • 1/4 cup maple syrup
  • 1/4 cup Ketchup
  • 1 tsp Sriracha sauce
  • 1 cup vegetable broth 250 ml

Preparation

  1. In a large skillet, over high heat, sauté vegetables, tempeh and ginger in oil for 5 minutes

  2. Add soy sauce, maple syrup, ketchup, sriracha sauce, vegetable broth and stir to combine

  3. Bring to a boil stirring constantly and cook until vegetables are tender

  4. Serve over basmati rice
