Indonesian Sour Vegetable Soup

Ingredients

  • 2 liters water
  • a handful of peeled peanuts
  • a handful of melinjo seeds
  • 2 corns
  • 300 grams young jackfruit
  • 300 grams chayote
  • 200 grams long beans
  • melinjo leaves, as needed
  • 2.5 teaspoons salt
  • 3.5 tablespoons granulated sugar
  • 2.5 tablespoons tamarind paste
  • 3 beef stock cubes or 1 teaspoon mushroom stock
  • 2-inch piece of galangal
  • 2 bay leaves

Ground spices

  • 8 shallots
  • 3 garlic cloves
  • 3 candlenuts
  • 3 large red chilies
  • 3 curly chilies
  • 1 teaspoon baked shrimp paste

Preparation

  1. Pour water into a pot and cook with peanuts and melinjo seeds until tender.

  2. Add corn, jackfruit, and ground spices, then boil until corn and jackfruit are sufficiently tender. Add all remaining ingredients and seasonings except long beans and melinjo leaves.

  3. Finally, add long beans and melinjo leaves, cook until they wilt and become tender, then turn off the stove and serve.

Tips

  1. For better color in photos, cook the melinjo leaves briefly, but ensure they are cooked until soft for optimal texture.
