Sundanese Red Bean Soup

Ingredients

  • 250 g fresh red beans
  • 250 g beef soup meat
  • 2 carrots
  • 2 inches galangal
  • 2 bay leaves
  • 10 shallots
  • 6 red curly chilies
  • 10 red bird's eye chilies
  • 1 packet ABC shrimp paste
  • Palm sugar to taste
  • Tamarind water to taste
  • Salt to taste
  • 2 green onions

Preparation

  1. Boil the beef soup meat, red beans, bay leaves, and galangal until the beans are half-cooked, then add carrots and boil until all are tender.

  2. Add whole shallots, whole red bird's eye chilies, sliced red curly chilies, shrimp paste, tamarind water, palm sugar, and salt to taste. Adjust the seasoning, finally add chopped green onions. Remove from heat and serve warm.

Tips

  1. Originally, this dish does not include carrots, but they can be added for better color.

  2. For extra spiciness, add more red bird's eye chilies.
