Kelp Noodles with Spinach Pesto
Ingredients
- 1 package plain kelp noodles
- 3 cups spinach
- 2 tbsp olive oil
- Juice of 1/2 lemon
- 1/4 cup pumpkin seeds
- 2-4 tbsp filtered water
- Sea salt to taste
Preparation
In a food processor, combine 1 cup spinach with the remaining ingredients, except the noodles (add water as necessary), and process until liquid.
Rinse and drain noodles, add to a saucepan over low heat and add pesto & remaining spinach.
Toss for 2 minutes until warm, do not cook for long.
You can also enjoy it cold.
