Easy Salads to Go with Fresh Toppings
Ingredients
- Arugula greens
- Cucumber
- Garlic
- Cherry tomatoes
- Bell pepper
- Broccoli
- Red onion
- Pumpkin seeds
- Lemon
- Olive oil
Preparation
Shred or ribbon cut the arugula greens to make room for toppings.
Cube the cucumber.
Mince the garlic.
Halve the cherry tomatoes.
Slice the pepper.
Shred the broccoli.
Thinly slice the red onion.
Toss in the pumpkin seeds.
Prepare a dressing with juice from half a lemon and olive oil.
Slice the remaining half lemon and add as garnish.
