Toasted Almond Spinach Pesto

Ingredients

  • 6-7 raw almonds
  • 1 cup raw spinach, chopped
  • 1 clove garlic, minced
  • 3 tbsp olive oil
  • 1/2 lemon
  • 1/2 tsp apple cider vinegar
  • 1 tsp Sea salt
  • Optional : 1-2 basil leaves

Preparation

  1. In a dry skillet, add almond on medium heat and toss to toast for about 5 minutes

  2. Add almonds to a food processor and grind until crumbled

  3. Add remaining ingredients and pulse until liquid

  4. It will be thick, but if you prefer a thinner consistency, add small increments of water

  5. Season to taste

  6. Enjoy
