Toasted Almond Spinach Pesto
Ingredients
- 6-7 raw almonds
- 1 cup raw spinach, chopped
- 1 clove garlic, minced
- 3 tbsp olive oil
- 1/2 lemon
- 1/2 tsp apple cider vinegar
- 1 tsp Sea salt
- Optional : 1-2 basil leaves
Preparation
In a dry skillet, add almond on medium heat and toss to toast for about 5 minutes
Add almonds to a food processor and grind until crumbled
Add remaining ingredients and pulse until liquid
It will be thick, but if you prefer a thinner consistency, add small increments of water
Season to taste
