Mini Blueberry Almond Flour Biscuits

Ingredients

  • 1 1/4 cup almond flour
  • 1/2 tsp. baking powder
  • 2 tbsp. butter
  • 1 egg
  • 3-4 tbsp. frozen wild blueberries

Preparation

  1. Preheat oven to 350F and spray or line a baking sheet.

  2. In a small bowl, whisk together the almond flour and baking powder.

  3. Stir in the melted butter until well combined, then stir in the egg until a dough forms.

  4. Fold in the blueberries, roll dough into 7 balls, slightly flatten them on the baking sheet, and bake for 15 minutes. Best enjoyed with extra butter on top.
