No-Bake Cheesecake in Jars

Ingredients

Coulis

  • 200g strawberries
  • juice of 1/2 lemon
  • 1 tsp cornstarch

Cheesecake mixture

  • 250g speculoos cookies
  • 60g margarine or coconut oil
  • 300g raw cashews, unsalted and untoasted
  • 200g plant-based yogurt
  • 1 lemon (juice and zest)
  • 4-5 tbsp liquid sweetener (maple syrup, agave syrup, or similar)

Preparation

  1. The day before, soak the cashews in water overnight or for 1 hour in boiling water and drain the yogurt for at least 30 minutes

  2. Mix the speculoos cookies with melted margarine and press into the bottoms of jars

  3. Blend the drained yogurt, drained cashews, lemon juice and zest, and liquid sweetener, and optionally add a small amount of melted coconut oil for a firmer texture

  4. Pour the mixture over the speculoos base and refrigerate, then prepare the strawberry coulis by cooking strawberries, lemon juice, and cornstarch in a saucepan until thickened, pour it over the cashew cream, and refrigerate before serving
