Oat Soup with Carrots and Potatoes
Ingredients
- 2 tablespoons butter
- 2 tablespoons corn oil
- 1/4 cup oats
- 1 medium onion
- 2 cloves crushed garlic
- 2 medium carrots
- 2 medium potatoes
- 2 tablespoons flour
- 4 cups broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon green thyme
- 2 tablespoons Parmesan or cheddar cheese
Preparation
In a pot, heat the butter and oil.
Add the oats and stir to toast slightly.
Add the onion and garlic and stir until wilted.
Add the carrots and potatoes and stir until wilted.
Sprinkle the flour and stir to mix.
Add the broth, salt, pepper, and thyme and let the soup cook for a few minutes.
Place the soup in a blender jug and blend until smooth.
Put the soup back in the pot and heat it well.
